Mango Salsa in an Avocado & Some Change

Every time I think salsa, I think chips, dip, parties, carbs, etc… But what if it doesn’t have to be that way? Well that’s a thought; things don’t have to always be the same. This sentence, which I am sure many of us hear over and over, can be applied to an array of different things. I personally need to practice change when it comes to certain things but no need to get into that.

We go through life creating these daily routines for ourselves accustoming our body to the same patterns. Because of this when something happens it comes to be a bigger issue than it should. And I know you’ve all hear this one: life goes on, deal with it. Change can be taken in many different ways depending on the person but it cannot consume us in a negative manner, we have to learn to make positives out of all situations.

I know it seems like I completely went off track but I am getting there, bare with me. Some people in my life have had to go through diet changes because of important issues needing to be addressed. These changes that these courageous people had to go through shined some light on my own habits. I used to be inactive, love to eat all kinds of unhealthy foods, and thought that only good food was the unhealthy kind. No, no, no, I was definitely wrong on that one.

Someone who truly loves cooking and putting ingredients together as much as I do can make the best out of any food restrictions. Eating healthy does not mean plain or bland at all, and most people tend to think that way; I know I used to. I keep repeating in my blog posts that substituting and making recipes your own is a must, and that is not only because each person needs to adapt things to their own taste but also because change is good!

In the following recipe I made a mango salsa and instead of eating it with bread I just scooped it inside an avocado. This is a wonderful and healthy alternative to eating salsa and it is absolutely delicious. The good thing about salsa too is that there are so many different ways and ingredients used in making it that it doesn’t get boring. Find the ingredients that YOU like and enjoy it the way YOU want to!

Ingredients:

  • 1 mango diced
  • 1 tomato diced
  • 1 cucumber diced
  • 1 small onion diced
  • Some chopped cilantro
  • Juice of 1 lemon
  • 1 avocado cut in half

Preparation:

  • Combine all your diced ingredients in a bowl.
  • Add the lemon juice, olive oil, salt and pepper to your preference.
  • Scoop your salsa into your avocado and enjoy!
