Citrus Shrimp & Tropical Salad – A Summer Must

Even though I might have some delicious papaya, I am not always hungry… (Don’t judge me by my Instagram page :P) Unfortunately, as it is fresh produce, it cannot be kept forever. I HAD to do something about it and this is when I had the idea to make this wonderful meal! The best thing about being home, ALL the ingredients are ALWAYS at my disposal; NO GROCERY SHOPPING FOR ME!!!

Being in Dubai with the sun, heat, pools, and ocean, I figured that the perfect meal had to be refreshing, light, and tropical. Thus came along my citrus shrimp accompanied by a spinach & zaartar tropical salad.

Ingredients:

  • Shrimp (peeled and cleaned)
  • 2 1/2 lemon
  • 2 oranges
  • 2 limes
  • Salt & Pepper to taste
  • Baby spinach
  • Fresh Zaartar
  • Papaya
  • Pomegranate Seeds
  • 1 avocado

Preparation:

  • Slice 1 lemon, half an orange, and a lime.
  • In a pan, add some olive oil.
  • Once your olive oil is hot all your sliced lemon, lime, and orange.
  • Juice 1 lemon, half an orange, and a lime. Set aside.
  • Once your lemon, orange, and lime slices have started to brown, add your shrimp.
  • Because the shrimp cooks fast you want to lower the heat just a tad.
  • Add in your lemon, orange, and lime juice that you set aside earlier.
  • While your shrimp is cooking (please keep an eye on as you don’t want to overcook), take a salad bowl and add your baby spinach and fresh zaartar.
  • Peel and slice your orange and add to the salad.
  • Add your pomegranate seeds to the salad as well.
  • Slice your avocado into cubes and add to the salad.
  • Slice some of your papaya into cubes and add to the salad.
  • For the sauce of the salad just mix together the juice of one lemon, olive oil, salt and pepper.
  • Hopefully you have been keeping an eye on your shrimp and it is cooked to perfection having reduced down the juices of the lemon, lime, and orange.
  • You are now ready to serve!!
