Grilled Eggplant – Childhood Memories

First, I would like to apologize for disappearing. I’ve simply been overly busy.

Second, I want to share with you today a lovely and simple recipe that I recently remembered loving at a young age. I haven’t eaten this in quite a long time but it just came to me as a craving (what doesn’t?).

It all started at the age of 8 when I was spending the day at the beach with my best friend. It was lunch time so my friends parents called out to us to come out of the poop and have some food. There were many adults so they decided to have a mezze style lunch (many small appetizer dishes in the middle of the table served family style). My friends father called us over to his side and declared that we needed to try something.

Always having been the adventurous tiny little girl with the appetite of a lion (more like I would want way more than I could ever eat), I was more than willing to try this new and exciting dish. After that, I asked my mother to make this for me at least once a week.

It was so simple yet so delicious. Slices of grilled eggplant with a garlic yogurt sauce drizzled over. YU-UU-UU-UU-MY! The best part, easy and not much time needed. I hope that you can try this recipe out and enjoy it as much as I do.

Ingredients:

  • 1 large eggplant sliced
  • Salt
  • Yogurt
  • Garlic, pressed

Preparation:

  • Layer your slices of eggplant in a colander and in between each layer sprinkle a good amount of salt.
  • Let your colander full of eggplant sit in the sink for the day to rid the eggplant of its juices.
  • When your eggplant is ready, pat each slice dry with a paper towel and place one by one on a baking sheet. *Do not put the slices on top of each other*
  • Bake at 350F until golden.
  • While your eggplant is baking, grab some yogurt (however much you would like on your eggplant) and mix it with your pressed garlic.
  • Drizzle yogurt over the baked eggplant and enjoy!
