Filling Ingredients:
- 8: Medium/Large Nectarines
- 1/4 Cup: sugar
- 2 Tbsp: oat flour (you can also use regular flour)
- 1 Tsp: cinnamon
Topping Ingredients:
- 2 Cups: oat flour (or 1 cup regular flour)
- 1/3 Cup: Sugar
- 1/3 Cup: packed brown sugar
- 1/2 Tsp: cinnamon
- 1/8 Tsp: ground ginger
- 1/4 Tsp: salt
- 1/2 Cup: chilled unsalted butter
Preparations:
- Preheat the oven to 180 degrees Celsius.
- Starting with your topping, cut the butter into small cubes and add them to a bowl.
- In the same bowl, add the rest of the topping ingredients.
- Start to slowly and gently mix the ingredients with your hands while also squeezing the butter.
- Continue until the mixture reaches a sandy and clumpy texture, and set aside.
- Remove the pit and any stem residue from your Nectarines
- Chop the Nectarines into small cubes
- Place the cubed Nectarines in your baking dish and fold in your filling ingredients until well incorporated
- Add the topping mixture on top.
- Bake for about 45 min or until golden on the top.
- Serve warm with a side of your favorite ice cream!
