Mom’s Lentil Soup

There’s always that one recipe that your mom makes you growing up when you’re not feeling well that seems to help. For me, that was my mother’s lentil soup. And as I grew older it became something I would systematically crave and request if I would need to get over getting sick.

Although the recipe is extremely simple to make, you have to understand that it is one of those measure with your heart recipes, and therefore all measurements are estimates ;).

Ingredients:

  • 1 to 2 tablespoons – Olive Oil
  • 2 medium onions – diced
  • 1 cup – black lentils
  • 3 cups – Chicken or Veggie stalk (add more water or stalk if needed as you cook)
  • 2 teaspoons – Cumin powder (I measure with my heart)
  • Salt, pepper & chili flakes to taste

Preparation:

  • In your olive oil, sautée your onions until translucent
  • Add your lentils, stalk and seasonings
  • Let it simmer until cooked, but be sure to add more liquid if needed.
