I would like to introduce you to a Rustic Soul Food recipe that I put together. My Bacon Wrapped Chicken Provençale is based on the flavors I tend to enjoy when I visit my family in the south of France. The beauty of this dish is that no additional oil or butter is needed as the bacon fat melts and keeps the whole dish moist and flavorful [bacon = life].
Ingredients:
- 2 Chicken Breast
- 4 Strips of bacon
- 2 Tsp Maille old style mustard
- Fresh Basil
- Fresh Thyme
Preparation:
- Preheat your oven to 170 degrees Celsius
- Butterfly your chicken breast
- Spread a teaspoon of mustard inside of each butterflied chicken breast
- Add fresh basil inside (to your hearts content)
- Fold your chicken back into one piece
- Wrap each breast with 2 strips of bacon
- Top off with thyme
- Place in oven and bake until chicken is cooked (anywhere from 30 min to an hour depending on the oven you are using and the thickness of the chicken breasts)
- Optional: Then turn your oven up to 250 degrees Celsius, switch the setting to grill and bake a little more until the bacon is crispy
