Oatmeal Blueberry Muffins

Ingredients:

  • 2 1/2 cups (325g) oat flour
  • 2 cups (414g) sugar
  • 3 tsp baking powder
  • 1 tsp salt
  • 1 cup (240ml) milk
  • 1/2 cup (120ml) vegetable oil
  • 1 tbsp vanilla extract
  • 2 large eggs

Preparations:

  1. Preheat oven to 180°C and line a cupcake tin.
  2. In a large bowl, combine sugar with your wet ingredients.
  3. Add in the flour, baking powder and salt. Mix well.
  4. Fold in your blueberries.
  5. Fill the cupcake liners about half way to 3/4 of the way and bake for 15-17 minutes, or until a toothpick comes out clean.
  6. Remove the cupcakes from oven and allow to cool.
