Ingredients:
- 2 1/2 cups (325g) oat flour
- 2 cups (414g) sugar
- 3 tsp baking powder
- 1 tsp salt
- 1 cup (240ml) milk
- 1/2 cup (120ml) vegetable oil
- 1 tbsp vanilla extract
- 2 large eggs
Preparations:
- Preheat oven to 180°C and line a cupcake tin.
- In a large bowl, combine sugar with your wet ingredients.
- Add in the flour, baking powder and salt. Mix well.
- Fold in your blueberries.
- Fill the cupcake liners about half way to 3/4 of the way and bake for 15-17 minutes, or until a toothpick comes out clean.
- Remove the cupcakes from oven and allow to cool.
