Ingredients:
- 1/2 a cup of oil
- 1 cup of sugar
- 2 lightly beaten eggs
- 3 ripe mashed up bananas
- 2 cups of oat flour (make sure it is marked gluten free if you don’t want cross contamination)
- 1 teaspoon of baking soda
- 1/2 teaspoon of baking powder
- 1/2 teaspoon of salt
- 3 tablespoons of milk
- 1/2 a teaspoon of vanilla essence (honestly here I am quite generous and go a little overboard)
- 1/2 Cup Chocolate chips (or to your heart’s content)
Preparation:
- Preheat your oven at 180 degrees Celsius.
- Either butter & dust your mould with oat flour, or line it with parchment paper
- In a bowl, mash up your bananas
- Add your oil and mix
- Add your eggs, sugar and mix
- Add your oat flour, baking soda, baking powder, salt, and mix well
- Add your milk, vanilla essence and mix until everything is well incorporated
- Add your chocolate chips (or desired toping) and fold in the batter
- Place your batter in the chosen recipient and bake until ready
- Tip: I use a toothpick to know when it is ready – you stick it through the top center and if it comes out clean, it’s done!
