Oat Banana Bread

Ingredients:

  • 1/2 a cup of oil
  • 1 cup of sugar
  • 2 lightly beaten eggs
  • 3 ripe mashed up bananas
  • 2 cups of oat flour (make sure it is marked gluten free if you don’t want cross contamination)
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 3 tablespoons of milk
  • 1/2 a teaspoon of vanilla essence (honestly here I am quite generous and go a little overboard)
  • 1/2 Cup Chocolate chips (or to your heart’s content)

Preparation:

  • Preheat your oven at 180 degrees Celsius.
  • Either butter & dust your mould with oat flour, or line it with parchment paper
  • In a bowl, mash up your bananas
  • Add your oil and mix
  • Add your eggs, sugar and mix
  • Add your oat flour, baking soda, baking powder, salt, and mix well
  • Add your milk, vanilla essence and mix until everything is well incorporated
  • Add your chocolate chips (or desired toping) and fold in the batter
  • Place your batter in the chosen recipient and bake until ready
  • Tip: I use a toothpick to know when it is ready – you stick it through the top center and if it comes out clean, it’s done!
