Birria Pulled Beef

I absolutely cannot stress how much I am currently loving this recipe. It is SUPER easy to make, convenient, and quick (despite the cooking time). Litterally 10 mins of prep and then you forget about it for 4 hours.

Another important thing is that here, you will measure with your heart. Be confident, you got this, and make all your ancestors proud.

Ingredients:

  • Beef: 500g
    • I buy something called beef for soup as this recipe does not need an expensive cut; you will be cooking it long enough for it to pull apart.
    • The cut would be something like Roast Chuck
    • You can also use a similar pork cut if you like; should work similarly
  • Onions: a few cut into rough chunks
  • Garlic cloves: to your hearts content; you can never have too much.
  • Lemon juice: you can use pre-squeezed
  • Chicken stalk: 2 cups per 500g beef
  • Bay leaves: about 2 per 500g of beef
  • Cumin powder
  • Tabasco chipotle pepper OR chipotle seasoning
  • Green tabasco OR you can use some jalapenos
  • Chili flakes
  • Oregano – can be dried
  • Thyme – can be dried
  • Olive oil – 1 to 2 Tbsp to sear the meat
  • Water

Preparation:

  • In your dutch oven pot, add the olive oil and sear your meat on all the sides
  • Set aside your seared meat and add in your onion chunks and garlic gloves
  • Once your onions are translucent, put your beef back into the pot
  • Add your chicken stalk first, then add water until the beef is fully covered
  • Add the rest of your ingredients
  • Tip: taste the liquid to understand if you want to add more of specific ingredients
  • Bring to a simmer / soft boil and cover with the lid
  • Leave for 4 hours or until the beef is easily pulled apart with 2 forks

You can serve this in many ways, so far I have served this on corn tortillas with additional toppings (jalapenos, shredded cheese, refried beans, hot sauce…), and with a side of mushroom risotto. Be creative 🙂
