So we’ve gone over the whole banana phase in lockdown, but no one really talks about apples. Is it just my household, or are we the only ones with an unholy amount of apples? Maybe it’s because I literally used to eat an apple a day when we were not working from home and didn’t notice the quantity of apples as it diminished throughout the week. Anywho, the apples were not being used and I thought well why not use them alongside its banana friend.
Ingredients:
- 3 Bananas
- 2 Apples – Cut into tiny Cubes
- 1/2 Cup – Applesauce (See below on how to make homemade sugar free applesauce)
- 4 Eggs
- 1/2 Cup – Olive Oil
- 4 Cups – Almond Flour
- 1/2 Cup – Arrowroot Starch
- 2 Tsp – Baking Soda
Preparation:
- Preheat your oven to 180 Degrees celsius
- Prepare your baking tin – I like to butter it and then put parchment paper
- Mash up your bananas into a mixing bowl
- Add in the rest of your ingredients and mix well
- Pour into your baking tin
- Bake until a toothpick comes out clean! (I’m not gonna lie I totally forgot to check the timing on this).

NOTE: This recipe does not keep well for more than 3 or 4 days as it contains quite a lot of moisture as a result of using Almond flour.
