GF Apple Cinnamon Donut Bites with Honey Cinnamon Glaze

Who doesn’t like donuts? Well, if you don’t then that’s your issue. 😛

I am generally extremely picky about my donut; it is either good or bad. And although I lived in Boston for a few year, the epicenter of Dunkin, I am very partial to Krispy Kreme – sorry Dunkin lovers. But something that I used to love in Boston, were the rustic homemade donuts that you could purchase at the farmer’s market on Copley Place. Yuuuuuummy!

The majority of the time, or as often as I can remember, these donuts from the farmers market came in fall-ish flavors. I might have honestly just gone to the market in fall but that’s not something I remember. Going back to the donuts, they were usually flavored something along the lines of pumpkin spice (I know basic but so good!), apple cider, or apple cinnamon 😉 And frankly speaking, I love fall flavors so who says that they should be restricted to fall? And so as we enter summer in lockdown mode, I decided that there are no rules (there shouldn’t be about flavor timings anyways – if you crave it then make it!) and I will make apple cinnamon donuts.

How does one make donut bites without donut moulds you ask? Get creative. The reason for which these are donut bites is literally because I did not have a donut pan and used a tiny quiche flexiplan mould. So you can basically eat 4, 5, 6, … without feeling guilty. Win for all!

Realizing that I’ve already written out way too much and the majority of people don’t read this stuff and skip to the recipe, here you go:

Ingredients for Donut:

  • 1 Cup – Applesauce
    • OR to make your own, about 4 regular-sized apples (yellow preferably) depending on the size of the apples
  • 3/4 Cup – Sugar
  • 2 Eggs
  • 3 Tbsp – Vegetable Oil (I used olive oil here)
  • 1/2 Tsp – Vanilla Extract
  • 3/4 Cup – Almond Flour
  • 1/2 Cup – Arrowroot Powder
  • 1/4 Cup – Coconut Flour
  • 1/2 Tsp – Xanthan Gum
  • 1/2 Tsp – Salt
  • 1/2 Tsp – Cinnamon
  • 1 Tsp – Baking Powder

Ingredients for Glaze:

  • 1 Cup – Powdered Sugar
  • 1/4 Teaspoon – Cinnamon
  • 1 Teaspoon – Vanilla Extract
  • 4 Tablespoons – Honey

Preparation:

  • Preheat the oven to 180 Degrees Celsius.
  • If you are not using a silicone pan, then make sure to grease that.
  • In a large bowl, mix together the applesauce, sugar, eggs, oil, and vanilla extract until well incorporated.
  • Add in the almond flour, arrowroot powder, coconut flour, xanthan gum, salt, cinnamon and baking powder. Mix well.
  • I added the batter to a piping bag in order to make it easier for me to place them in the moulds. You do you, but I would highly suggest this.
  • Bake for 10 – 16 min depending on the size of your donuts or until they start to golden.
  • While these babies are cooking, in a saucepan, combine the ingredients of the glaze and stir on low heat.
  • As the honey melts from the heat, the glaze should thin out. Be careful not to caramelize the glaze.
  • While the glaze is still warm, dip each donut in and place on a cooling rack.
  • If the glaze thickens then heat it up again.
  • Enjoy!

**Note: To store, I stuck them in the fridge and they become much more addictive when cold. You have been warned.

Homemade Sugar-Free Applesauce Preparation:

  • Peel, core, and cut your apple into small chunks.
  • Place your apple chunks in a saucepan and add a little but of water.
  • Let it cook until the apples become soft if you prick them with a knife.
  • Blend.
  • Enjoy!
