Chocolate Layer Cake with Oreo Buttercream Filling 

I recently started work after graduating from University. Days are filled with things to do and I often find myself wishing there were more hours in the day so that I could fulfill everything possible. I barely find the time to cook and always welcome an opportunity when it presents itself.

Believe it or not, it’s only been three weeks at work and the opportunity has presented itself twice already! Once, with a promise for chocolate chip cookies, and the other because it was my line managers birthday 😊

Since he found out about my interest in cooking, he has been requesting baked goods from me. Because of this, I decided what better way to make someone happy than to bake them an awesome cake for their birthday! Why this one though? I had a previous request for something involving oreos and then anothe for chocolate.

Ingredients:

Cake:

  • 2 cups flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup packed brown sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 3/4 tsp salt
  • 3/4 cup oil
  • 2 eggs
  • 2 tsp vanilla
  • 1/3 cup milk
  • 1/3 cup sour cream
  • 1 cup boiling water

Oreo Cream Filling:

  • 113 grams (1/2 cup or 1 stick) butter, softened
  • 1 1/2 – 2 cups powdered sugar
  • 1 tsp vanilla
  • 1 Tbsp milk
  • 6-8 Oreo cookies, chopped into chunks

Chocolate Frosting:

  • 113 grams (1/2 cup or 1 stick) butter, melted
  • 2/3 cup unsweetened cocoa powder
  • 2 1/2 – 3 cups powdered sugar
  • 1/3 cup milk
  • 1 tsp vanilla extract

Preparation:

Cake:
  1. Preheat oven to 180 degrees C (350 degrees F).
  2. Butter two 9-inch cake pans (Varies depending on how tall you want your cake to be; taller –> smaller diameter & shorter –> larger diameter).
  3. In a large mixing bowl combine the flour, sugars, cocoa powder, baking powder, baking soda and salt.
  4. Add oil, eggs, vanilla, milk and sour cream.
  5. Mix with an electric mixer until well combined.
  6. Reduce speed of the mixer and carefully pour in the boiling water.
  7. Beat on high speed for 1 minute to add air to the batter.
  8. Divide batter evenly between the prepared cake pans.
  9. Bake for 28-33 minutes, or until a toothpick inserted in the center comes out clean.
  10. Remove from the oven and allow to cool for 5 minutes in the pans.
  11. Invert cakes onto a wire cooling rack to cool completely.
Oreo Cream Filling
  1. Beat the softened butter with an electric mixer until light in color; for about 3 min.
  2. Add powdered sugar; ½ a cup at a time.
  3. Beat well to combine between each addition.
  4. Add vanilla and milk; mix well.
  5. For thinner frosting add a little more milk.
  6. For thicker frosting add a little more powdered sugar.
  7. Fold in chopped Oreo cookie pieces.
  8. Spread filling over the top of one of the cake rounds.
  9. Top with the second cake round.
  10. Cover the cakes with chocolate frosting.

Chocolate Frosting
  1. Add cocoa powder to a bowl with the melted butter and mix well to combine.
  2. Alternately add powdered sugar and milk, beating until your reach your desired spreading consistency. (Use an electric mixer)
  3. Stir in vanilla.
