If you’re like me, you love breakfast and you love lunch. The only thing that can really tear apart that love, is your LOVE of brunch.
About just short of two years ago when I was visiting brother dearest in the heart of London, both he and his loving girlfriend took mother dearest and I to their favorite brunch spot. It was a quaint bistro-style restaurant buzzing with the sound of laughter, conversation, and happiness.
I was hungry and excited. Browsing the menu and being indecisive as ever, my brother’s girlfriend decided to tell me about a dish called Turkish Eggs. She elaborates explaining that it is a bowl of Labneh (a thicker and more sour yoghurt with middle eastern origins) with a Poached Egg – hmmmm, curious. I am a huge fan of both labneh and poached eggs so I take the plunge with a side of sliced avocado (YES!).
Oh my days. What delicious bliss. I fell in love with the dish. With this, today I give you my version of a turkish egg.
Ingredients:
- Labneh (In Dubai, I use the brand Chtoora)
- 1 Egg
- White Vinegar (To help with poaching)
- Chili Flakes
- Chili Powder (Hot)
- Fresh Ground Pepper
- Sea Salt
- Olive Oil
- 1 Avocado
- 1 Medium Tomato
- 1/2 Lemon
Preparation:
- In a bowl, put some labneh
- Sprinkle with chili powder, chili flakes, and ground pepper
- Drizzle some olive oil
- On a separate plate slice the tomato and the avocado
- Sprinkle with chili powder, ground pepper, and sea salt
- Squeeze some lemon juice on your tomato and avocado to keep from browning and add flavor
- In a small pot, boil some water with some vinegar
- Crack the egg in separate a cup or bowl, keeping the yolk intact
- One the water starts to bubble, take a spoon and start swirling the water, creating a whirlpool
- Drop the egg in and keep swirling in the same direction
- After a few seconds your egg will start to poach
- Don’t keep the egg in the water too long as you want to keep the center runny
- Take your egg out of the water and place it gently on your labneh
- Sprinkle on a little more pepper, chili powder, and chili flakes
