This dish does not have a back story unlike the last couple I posted. I simply had the ingredients in my kitchen and threw them together in what seemed like a delicious combination – FYI, it was absolutely scrumptious 🙂
This dish is relatively easy to make, and does not take long at all – about half an hour in total. When I made it, I used a whole box of linguini so I would say that this dish can serve around 4 people.
Before I continue with the recipe, I would love to see some suggestions on how to modify dishes, if you would like me to cook something in particular, or if you simply enjoyed the dish itself when you made it!
Ingredients:
- 1 box of linguini (I used whole wheat because I like it better)
- 1 packet of frozen shrimp (cooked/uncooked, peeled/unpeeled – it is up to you)
- 2 cans of diced tomatoes
- 1 small can of tomato paste
- 1 large onion chopped
- Juice of 1 lemon
- 4 cloves of garlic crushed
- Salt
- Pepper
- Chili Flakes
- Chopped Cilantro
Preparation:
- In a pot boil water with olive oil and salt
- Once the water is at a boil, add in your linguini (Make sure to strain the linguini when it’s cooked!)
- In a separate pot, add some olive oil
- Once the oil is hot, add in your chopped onion and let it caramelize
- Add in your crushed garlic and your shrimp
- Make sure the shrimp cooks through
- Once your shrimp is cooked you can go ahead and add the two cans of diced tomatoes
- Add in the small can of tomato paste (for consistency)
- Add the lemon juice
- Add the salt, pepper, tabasco, and chili flakes (the amount depends on personal preferences)
- Add some chopped cilantro in the mixture and let simmer for five minutes
- Mix the linguini in with the sauce
Enjoy with some freshly grated parmesan!!
