Chicken and Artichokes – A Meal that Makes Anyone Run to the Table

My daily ritual in high school consisted of going to class from 8am to 3pm, extra curricular activities, going home and having a big late lunch, taking a big nap, waking up and doing homework, sitting with my family at dinner time, doing some more homework, and lastly going to sleep. Not exactly the ideal daily routine, but I loved it.

Once in a while I would break that routine because I could never resist certain meals mother made for dinner (since I usually had a late lunch I was not hungry for dinner – I would just join my family at the dinner table). This following dish was one of my absolutely top favorites. She would even use it as a lure to get me back home in time for dinner when I was out with my friends all day!

Ingredients:

  • Chicken Thighs (I used cut up breasts this time)
  • Frozen Artichoke Hearts (I used canned ones because thats what my supermarket had)
  • 3-4 Lemons
  • Butter
  • Flour
  • Chopped Cilantro – Make sure it is sliced very small
  • Red Pepper
  • Black Pepper
  • Salt

Preparation:

  • In a pan, cook the chicken with a little bit of olive oil until slightly golden – Make sure to not overcook the chicken because you will cook it more later.
  • Remove chicken from pan and set aside.
  • Defrost the artichokes by boiling them in salted water.
  • Strain the artichokes and cut into chunky slices.
  • In a new pot, melt a generous piece of butter on low heat.
  • Add a spoon of flour to the butter and mix until you get a paste.
  • Keep mixing and the juice of 2 – 3 lemons.
  • Add water until you get the desired consistency – sauce will thicken.
  • Add some salt, black and red pepper, and your cilantro.
  • Add your chicken and your artichokes to your sauce.
  • Let everything simmer on low heat for about half an hour.
