My Bananas are Going Bad!!!! (Part 3, 4, & 5)

Living by myself, I never finish my bananas before they become too ripe. And as you may or may not already know, there are so many things you can do with rotting bananas.

This time, I had a whole bunch and decided to try out a few recipes. These recipes are all healthy and delicious. They are perfect for breakfast, snacks, and pre or post workout snacks.

1.Banana Apple Oatmeal Muffins:

Ingredients:

  • 1 1/2 cups large rolled oats
  • 1 cup all purpose or 60% whole wheat flour
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 eggs
  • 4 tbsp vegetable oil
  • 6 tbsp sugar
  • 2/3 cup milk
  • 1 cup mashed ripe banana
  • 1 cup grated apple (approximately one large apple)

Preparation:

  • Mix together the oatmeal, whole wheat flour, baking powder, salt,cinnamon and nutmeg.
  • Set aside.
  • Beat together the eggs. oil and sugar until fluffy.
  • Blend in the milk.
  • Fold in the dry ingredients.
  • When the flour is almost incorporated fold in the mashed banana and grated apple.
  • Do not over mix.
  • Fold in only until the fruit is mixed through the batter.
  • Spoon into greased or paper lined muffin tins and bake at 350 degrees F for 20 -25 minutes or until a toothpick inserted in the center comes out clean.
  • Best served warm.

2.Oatmeal Banana Peanut Butter Cookies:

Ingredients:

  • 2 ripe bananas, mashed
  • 1/3 cup creamy peanut butter
  • 1/3 cup canola oil
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 3 1/4 cup old fashioned oats
  • 1/4 cup flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Preparation:

  • Preheat oven to 350 degrees.
  • Line a cookie sheet with parchment paper or spray with cooking spray.
  • Mix bananas, peanut butter, canola oil and sugar together until relatively smooth.
  • Add egg and vanilla.
  • Mix until combined.
  • In a separate bowl, combine oats, flour, baking powder, baking soda and salt.
  • Slowly mix oat mixture into banana mixture until everything is combined.
  • Place spoonfuls of dough on cookie sheet and bake for approximately 10 – 12 minutes.
  • Allow to cool and enjoy.

3. Banana Peanut Butter Cookies

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon cornstarch
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup (1 stick) butter, softened
  • 1/2 cup sugar
  • 1/2 cup creamy natural peanut butter
  • 1 egg
  • 1/2 cup mashed banana (about 1 medium banana)
  • 1 teaspoon vanilla extract

Preparation:

  • Heat oven to 350F.
  • Line a baking sheet with parchment paper.
  • In a medium mixing bowl, whisk the flour, baking powder, cornstarch, salt, baking soda and cinnamon until combined.
  • Set aside.
  • In a separate bowl, cream the butter and sugar together until light and fluffy.
  • Add peanut butter, egg, banana, and vanilla.
  • Continue mixing until combined.
  • Fold in the dry ingredients and mix until just combined.
  • Measure out a rounded tablespoon-full of dough, then place on the baking sheet.
  • Bake for 8-10 minutes or until slightly golden around the edges.
  • Cool for 10 minutes on baking sheet.
  • Serve immediately or store in a sealed container for up to 1 week.
