My bananas are going bad!

Don’t you hate it when your bananas become too ripe?

For those of you who don’t know you can do a few things with them. You can freeze them (the skin will turn brown but the banana will stay yellow) and chuck them in a smoothie, or you can bake with them.

My mother used to always make banana chocolate chip muffins, they are absolutely delicious!

Like any recipe you can easily adjust the measurements, it’s basic math!

Ingredients:

  • 1/2 a cup of oil
  • 1 cup of sugar
  • 2 lightly beaten eggs
  • 3 ripe mashed up bananas
  • 2 cups of flour
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 3 tablespoons of milk
  • 1/2 a teaspoon of vanilla essence
  • 1/2 Cup Chocolate chips

Preparation:

  • Preheat your oven at 170 degrees Celsius.
  • Either butter a cake tin or line your cupcake tins
  • In a bowl, mix together the eggs and sugar
  • Add your milk, mashed bananas, oil, flour, baking soda, baking powder, salt, milk and vanilla essence
  • Mix until well incorporated
  • Add your chocolate chips (or desired toping) and fold in the batter
  • Place your batter in the chosen recipient and bake until ready
  • Tip: I use a toothpick to know when it is ready – you stick it through the top center and if it comes out clean, it’s done!
