
My Take on a Chicken Taco Salad:
Marinade:
(The following was for two big chicken breasts and can be adjusted for more or less chicken)
-1 cup of tequila
-1 1/2 cup of lemon juice
-1/2 cup of olive oil
-Rosemary seasoning
-Basil seasoning
-Chili pepper flakes
-Salt
-Pepper
• In a zip lock bag put the chicken and add all of the marinade ingredients.
• Close the bag and shake.
• Leave for a couple of hours.
Dressing:
-1 bottle ranch dressing
-1 packet of taco seasoning
-Lemon Juice
• Put the contents of the packet into a small pan and add water (Follow the instructions on the packet of taco seasoning for the amount of water needed).
• Stir until the seasoning thickens.
• Let it cool.
• Pour the ranch dressing in a bowl.
• Add the taco seasoning to the ranch dressing and mix well.
• Add lemon juice and stir to your liking. (I put about 1/4 of a cup)
• Put the mixture in the fridge and let cool.
Cilantro Lemon Rice:
(The following was for about a cup of rice and can be adjusted to the amount of rice being cooked)
-Rice
-Water
-Butter
-Cilantro
-Lemon
• Melt a spoon of butter in the uncooked rice and stir.
• Add half of the recommended amount of water.
• For the second half of the recommended amount of water add lemon juice.
• Add a spoon of butter on the water.
• Let the rice cook.
• Once the rice is done add finely chopped cilantro and mix.
Salsa:
-1 can of corn
-Cilantro
-3 tomatoes
-Half a green bell pepper
-Half an orange bell pepper
-2 avocados
-1/4 of a big onion
• Put the corn in a bowl.
• Chop the cilantro finely and add in the bowl.
• Dice the tomatoes and put the content in the bowl.
• Dice both the green and the orange bell pepper finely and add to the bowl.
• Dice the onion finely and add to the bowl.
• Dice both avocados finely and add to the bowl.
Chicken:
-1/4 of an onion
-Half green bell pepper
-Chicken
• Chop both the onion and the bell pepper and toss them in a hot pan.
• Stil until the onions are golden.
• Cut the marinated chicken into small pieces and add to the pan.
• Cook through the chicken.
Taco Salad:
-Dressing
-Salsa
-Chicken
-Rice
-Sour cream
-Lettuce
• Finely chop the lettuce and put in a bowl.
• Top the lettuce with some of the dressing.
• Add the cilantro lime rice.
• Top the rice with more of the dressing.
• Add the cooked tequila lemon chicken.
• Add the salsa.
• Top the salad with sour cream.
